Oats Cinnamon Banana Pancakes

My personal favourite.

Time: 10 minutes
Serves 1

You will need:

  • 1/3 cup rolled oats
  • 4 egg whites
  • 1 medium banana
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • small splash of milk of your choice (I usually use almond milk)
  • coconut oil, for greasing the pan


Simply peel the banana, then place the banana, oats, egg whites, cinnamon, vanilla and splash of milk in a food processor. Blend until the mix is nice and smooth.

Heat up a non-stick frying pan to a medium heat and grease it a little with coconut oil.

Once the pan is really hot, place approximately 1/4 of a cup worth of mixture onto it.

Let cook for 1-2 minutes until the pancakes begin to bubble slightly and the contour turns a brownish colour.

Flip and let cook on the other side.



A good method to keep them warm as you go is to pile them on a small plate and cover with a “cereal bowl” to keep the heat inside.

Remember toppings are key to yummy pancakes. Top over with honey, agave nectar, nuts, fruits or you tell me!

1/3 taza de avena en hojuelas
4 claras de huevo
1 banano mediano
1 cucharadita de canela
1 cucharadita de extracto de vainilla
Un  chorrito de leche  (yo suelo usar leche de almendras)
aceite de coco, para engrasar el sartén


Pelar el banano y ponerlo en una licuadora (o un procesador de comida) con la avena, claras de huevo, canela, vainilla y el chorrito de leche. Batir hasta que la mezcla quede espesa y suave.

Calentar un sartén antiadherente a fuego medio y engrasar un poco con aceite de coco.

Una vez que el aceite esté caliente, poner aproximadamente 1/4 de taza de la mezcla en el sartén.

Dejar cocer durante 1-2 minutos hasta que los pancakes comiencen a burbujear un poco y los bordes se pongan doraditos.

Voltear y dejar cocer por el otro lado.


Un buen método para mantenerlos calientes es apilarlos en un plato y cubrirlos con un “bowl de cereal” para mantener el calor.

Los toppings son clave para unos buenos pancakes! Ponerles miel, néctar de agave, nueces, frutas o lo que te guste!
